Ermesenda is an organic, semi-hard cheese produced from raw cow’s milk in Adrall, a village in the Alt Urgell region of Catalonia, Spain. This cheese undergoes a maturation period of at least 90 days, during which its washed rind develops a distinctive orange hue and a moist, slightly sticky texture.
The interior paste is ivory to yellowish, featuring small eyes and a creamy, unctuous consistency. Ermesenda offers a complex and evolved taste, powerful and persistent, with a long and pleasant aftertaste. Its flavor profile is both powerful and persistent, leaving a long and pleasant aftertaste. Notably, Ermesenda is not suitable for vegetarians, as it is made using animal rennet.
