It originates from Sicily and other central-southern regions of Italy. This semi-hard to hard cheese has a firm, crumbly texture with a rich, savoury, and slightly spicy flavour due to the whole or crushed peppercorns embedded throughout. Aged varieties develop a sharper, more intense taste. It is commonly enjoyed on its own, grated over pasta, or paired with cured meats and bold wines.
