Taleggio – a renowned Italian cheese – boasts a rich history and a truly one-of-a-kind flavor profile. Indeed, it is one of the world's oldest soft cheeses and dates back to the 9th century in Bergamo, in the Val Taleggio region of northern Lombardy. During the cheese-making process, acidic milk is brought to the laboratory and then placed on wooden shelves in chambers and caves. To prevent mold infestation, the cheese is washed once a week, a process that helps create its pungent aroma.
While it may be compared to other soft cheeses like Brie or Camembert, Taleggio stands out with its unique and distinct characteristics of its own. Taleggio cheese has a rich, creamy texture with an intense and complex flavor. It is known for its intense aroma, which can be described as earthy and slightly tangy. Its creamy taste is reminiscent of Gorgonzola Dolce, a similarly mild and sweet cheese.
