Alkorta Bacalao Salado is a traditional salted cod fillet, prepared using time-honoured curing methods to preserve the fish and intensify its flavour. Sourced from cold Atlantic waters, the cod is carefully salted and dried, resulting in a firm texture and a deep, distinctive taste.
Before cooking, the fillet needs to be soaked in water to remove excess salt and rehydrate the fish. Once prepared, it becomes tender and flaky, making it ideal for classic dishes such as bacalao a la vizcaína, stews, or simply pan-fried with olive oil and garlic.
