La Ribera Morcilla de Burgos is a traditional Spanish blood sausage from the Castilla y León region, recognised with IGP status for its authenticity and regional heritage. Made using pork blood, rice, onions and a blend of spices, it reflects one of Spain’s most iconic charcuterie styles.

Unlike many other blood sausages, the Burgos version includes rice, giving it a softer, more delicate texture and a unique, slightly creamy bite. The flavour is rich and savoury, with gentle sweetness from the onion and a subtle warmth from its seasoning.

Typically cooked before serving, it can be pan-fried until crisp on the outside, grilled, or added to stews and tapas dishes. It’s a deeply traditional product that brings bold, comforting Spanish flavours to the table.
