Pale, delicate albacore tuna, known in Spain as bonito del norte, preserved in olive oil in a 220g jar. Ortiz sources rod-and-line-caught fish from the Bay of Biscay and trims and packs the fillets by hand. The silky texture is best enjoyed simply in a salad, on toast or as part of a tapas selection.
