Xinomavro Thymiopoulos
Thymiopoulos Xinomavro is produced in Naoussa in northern Greece, a region renowned for this noble indigenous variety, where altitude and climate bring both structure and freshness.
The nose is complex and evolving, with aromas of sour cherry, red plum, and dried tomato, layered with notes of olive, spice, and a distinctive earthy character, alongside hints of leather and dried herbs.
Medium to full-bodied, it shows firm, grippy tannins and vibrant acidity, giving the wine a structured and age-worthy profile. Flavours of tart red fruit, sun-dried tomato, and savoury spice unfold with a subtle smoky edge and underlying minerality.
The finish is long and persistent, with lingering savoury notes and bright acidity, offering both depth and precision, making it particularly suited to rich, slow-cooked dishes and grilled meats.
